For the Steak

  • 1 sirloin steak (11.5 inches thick)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil

For Basting and Flavor

  • 2 tablespoons unsalted butter
  • 2 cloves garlic, smashed
  • 2 sprigs fresh thyme or rosemary

Instructions

Step 1: Prepare the Steak

  1. Pat the steak dry with paper towels to remove moisture, ensuring a better sear.
  2. Season generously with salt and black pepper on both sides.

Step 2: Heat the Pan

  1. Heat a cast-iron skillet over high heat for 2-3 minutes until very hot.
  2. Add olive oil and swirl to coat the pan.

Step 3: Sear the Steak

  1. Place the sirloin steak in the pan and sear for 2-3 minutes without moving it.
  2. Flip the steak and sear for another 2-3 minutes until a crust forms.

Step 4: Baste with Butter and Herbs

  1. Reduce heat to medium, add butter, smashed garlic, and thyme or rosemary.
  2. Tilt the pan slightly and use a spoon to baste the steak with melted butter for 1-2 minutes.

Step 5: Cook to Desired Doneness

  1. Use a meat thermometer to check doneness:
    • Rare: 120-125°F (49-52°C)
    • Medium-rare: 130-135°F (54-57°C)
    • Medium: 140-145°F (60-63°C)
    • Medium-well: 150-155°F (65-68°C)
    • Well-done: 160°F+ (71°C+)

Step 6: Rest and Serve

  1. Transfer the steak to a cutting board and let it rest for 5 minutes to retain juices.
  2. Slice against the grain and serve with your favorite sides.
