For the Bolognese Sauce

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 1 carrot, finely diced
  • 1 celery stalk, finely diced
  • 2 cloves garlic, minced
  • 1 lb (450g) ground beef (or a mix of beef and pork)
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 1 teaspoon smoked paprika (optional, for depth)
  • 1 tablespoon Worcestershire sauce
  • ½ cup red wine (optional, for richness)
  • 2 tablespoons tomato paste
  • 1 can (14 oz) crushed tomatoes
  • ½ cup beef stock
  • 1 teaspoon sugar (balances acidity)
  • 1 bay leaf

For the Pasta

  • 12 oz (340g) spaghetti
  • 1 tablespoon salt (for boiling water)

For Garnish & Serving

  • ½ cup freshly grated Parmesan cheese
  • Fresh basil or parsley, chopped
  • Extra virgin olive oil drizzle

Instructions

Step 1: Prepare the Bolognese Sauce

  1. Heat olive oil in a large pan over medium heat.
  2. Sauté onion, carrot, and celery for 5 minutes until softened.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Add ground beef and cook for 5-7 minutes, breaking it up until browned.
  5. Season with salt, black pepper, oregano, thyme, and smoked paprika.
  6. Stir in Worcestershire sauce and tomato paste, cooking for 1 minute.
  7. Pour in red wine and let it reduce for 2 minutes.
  8. Add crushed tomatoes, beef stock, sugar, and bay leaf.
  9. Simmer uncovered for 25-30 minutes, stirring occasionally.

Step 2: Cook the Spaghetti

  1. Bring a large pot of salted water to a boil.
  2. Cook spaghetti according to package instructions (8-10 minutes).
  3. Drain and toss with a little olive oil to prevent sticking.

Step 3: Assemble and Serve

  1. Remove bay leaf from the sauce.
  2. Toss spaghetti with the Bolognese sauce or serve sauce on top.
  3. Garnish with Parmesan, fresh basil, and a drizzle of olive oil.
  4. Serve immediately and enjoy!
