For the Dip:

  • 2 cups fresh spinach, chopped (or 1 cup frozen, thawed and drained)
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 8 oz (225g) cream cheese, softened
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 1 cup mozzarella cheese, shredded
  • ½ cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional, for heat)

For the Topping:

  • ¼ cup mozzarella cheese, shredded
  • 2 tablespoons Parmesan cheese, grated
  • 1 teaspoon olive oil (for brushing, optional)

Instructions

Prepare the Ingredients:

  1. Preheat the oven – Set to 375°F (190°C).
  2. Prepare the spinach – If using fresh spinach, sauté it in a pan over medium heat for 2-3 minutes until wilted. If using frozen spinach, make sure to drain excess water.
  3. Chop the artichokes – Drain the canned artichokes and roughly chop them into small pieces.

Make the Dip Mixture:

  1. Mix the base – In a large mixing bowl, combine cream cheese, sour cream, and mayonnaise. Stir until smooth and creamy.
  2. Add cheese and seasonings – Stir in shredded mozzarella, grated Parmesan, minced garlic, salt, black pepper, and red pepper flakes (if using).
  3. Fold in spinach and artichokes – Gently mix in the prepared spinach and chopped artichokes until well incorporated.

Bake the Dip:

  1. Transfer to a baking dish – Spread the mixture evenly in an oven-safe dish.
  2. Top with cheese – Sprinkle additional mozzarella and Parmesan over the top for a golden crust.
  3. Bake until bubbly – Bake for 20-25 minutes or until the cheese is melted and the edges are slightly golden.
