  • Extra cracked black pepper
  • Drizzle of olive oil or cream (optional)

Instructions

Step 1: Sauté the Vegetables

  1. Heat olive oil or butter in a large pot over medium heat.
  2. Sauté onion and garlic for 2-3 minutes, until softened and fragrant.
  3. Add carrots and celery and cook for another 5 minutes until slightly tender.

Step 2: Build the Flavor

  1. Season the soup: Stir in salt, black pepper, smoked paprika, thyme, and bay leaf.
  2. Add the split peas: Pour in the dried split peas and stir well.

Step 3: Simmer the Soup

  1. Add broth and ham: Pour in the stock and add the diced ham or bacon (if using). Stir in Worcestershire sauce for extra depth.
  2. Bring to a simmer, then cover and cook for 45 minutes, stirring occasionally, until the peas are soft and tender.
