Gordon Ramsay’s Steak Pie is a traditional British dish made with slow-cooked beef and a rich, meaty gravy, topped with buttery puff pastry and baked until golden brown. This dish is often served in British pubs and is best enjoyed with mashed potatoes or mushy peas.

For the Steak Filling

  • 2 tablespoons olive oil
  • 1 lb (450g) beef chuck or stewing beef, cut into cubes
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh thyme (or ½ teaspoon dried)
  • 1 teaspoon fresh rosemary (or ½ teaspoon dried)
  • ½ cup red wine (or extra beef stock for a non-alcoholic version)
  • 1 cup beef stock
  • 1 tablespoon tomato paste
  • 1 teaspoon cornstarch (optional, for thickening)

For the Pastry

  • 1 sheet puff pastry (store-bought or homemade)
  • 1 egg yolk (for egg wash)
  • 1 tablespoon milk

Instructions

Step 1: Sear the Beef

  1. Heat olive oil in a large pan over medium-high heat.
  2. Season the beef with salt and black pepper, then sear for 4-5 minutes until browned on all sides. Remove and set aside.

Step 2: Cook the Vegetables

  1. In the same pan, sauté onions and carrots for 5 minutes until softened.
  2. Add garlic and cook for 1 minute until fragrant.

Step 3: Make the Gravy

  1. Stir in tomato paste, Worcestershire sauce, Dijon mustard, thyme, and rosemary.
  2. Deglaze the pan with red wine, scraping up any browned bits. Let it reduce for 2 minutes.
  3. Add beef stock and return the beef to the pan.
  4. Simmer for 1 hour, stirring occasionally, until the beef is tender and the sauce thickens.
  5. If needed, mix cornstarch with a little water and stir into the sauce for extra thickness.

Step 4: Assemble the Pie

  1. Preheat oven to 400°F (200°C).
  2. Transfer the beef filling into a pie dish.
  3. Roll out puff pastry and place it over the dish, trimming any excess.
  4. Press the edges down and brush with egg wash (egg yolk + milk mixed).

Step 5: Bake and Serve

  1. Bake for 25-30 minutes until the pastry is golden and crispy.
  2. Let it rest for 5 minutes before serving.
