  • 1 small shallot, finely chopped
  • 1 clove garlic, minced
  • ½ cup red wine (Cabernet Sauvignon or Merlot)
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 cup beef stock
  • 1 tbsp butter
  • ½ tsp black pepper
  • ½ tsp salt

Instructions

Sauté the Aromatics:

  1. Heat olive oil in a pan – Over medium heat, warm 1 tbsp olive oil.
  2. Cook the shallots and garlic – Sauté until soft and translucent (2-3 minutes).

Deglaze with Red Wine:

  1. Pour in the red wine – Stir and let it simmer for 2 minutes, reducing slightly.
  2. Add Worcestershire sauce and Dijon mustard – Whisk until well combined.

Simmer the Sauce:

  1. Pour in the beef stock – Stir and let it reduce by half (5-7 minutes).
  2. Season with salt and black pepper – Adjust to taste.

Finish and Serve:

  1. Stir in butter – This creates a smooth, velvety texture.
  2. Strain for a finer sauce (optional) – Use a fine-mesh sieve for a silky consistency.
  3. Serve warm – Drizzle over steak immediately.
