  • For the tartare:

    • 8 oz (225g) beef fillet (high-quality, grass-fed)
    • 1 small shallot, finely chopped
    • 1 tbsp capers, drained and chopped
    • 1 tbsp Dijon mustard
    • 1 tbsp Worcestershire sauce
    • 1 tbsp olive oil
    • 1 tsp hot sauce (Tabasco or similar)
    • 1 tsp lemon juice
    • 1 egg yolk (preferably pasteurized)
    • 1 tbsp fresh parsley, finely chopped
    • ½ tsp salt
    • ½ tsp freshly ground black pepper
  • For serving:

    • Toasted baguette slices or crackers
    • Extra egg yolk (optional, for presentation)
    • Microgreens or fresh arugula for garnish

Instructions

  1. Prepare the beef – Use a sharp knife to finely chop the beef fillet into small, even pieces. Do not use a food processor, as it changes the texture.
  2. Mix the seasonings – In a bowl, combine shallots, capers, mustard, Worcestershire sauce, olive oil, hot sauce, lemon juice, and chopped parsley.
  3. Combine with beef – Add the chopped beef to the mixture and gently stir to coat evenly.
  4. Add the egg yolk – Mix in one egg yolk for richness and binding. Adjust seasoning with salt and black pepper.
  5. Shape and plate – Use a ring mold to shape the tartare neatly onto a plate.
  6. Garnish and serve – Top with an extra egg yolk (optional) and serve with toasted baguette slices or crackers.
