Ingredients

  • 1 cup (225g) unsalted butter, softened

  • 1 cup (200g) granulated sugar

  • 1 large egg

  • 2½ cups (315g) all-purpose flour

  • 1 teaspoon vanilla extract

  • ½ teaspoon baking powder

  • ¼ teaspoon salt

  • Optional: ½ teaspoon almond extract for extra flavor

Instructions

  • Step 1: In a large bowl, cream the butter and sugar together until light and fluffy using a hand or stand mixer.

  • Step 2: Beat in the egg, vanilla extract, and almond extract if using, until fully combined.

  • Step 3: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet mixture.

  • Step 4: Mix until a soft dough forms. Do not overmix—stop once the dough comes together smoothly.

  • Step 5: Divide the dough in half, flatten into discs, wrap in plastic, and chill for 1 hour (or up to 24 hours).

  • Step 6: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

  • Step 7: Roll dough to about ¼-inch thickness on a floured surface. Cut out shapes with cookie cutters.

  • Step 8: Transfer cookies to baking sheets and bake for 8–10 minutes, until edges are lightly golden.

  • Step 9: Let cookies cool on the tray for 2–3 minutes before moving to a wire rack.
