Ingredients

Scale

For the Beef:

  • 12 oz (340g) sirloin or ribeye steak
  • 1 tablespoon vegetable oil
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper

For the Salad:

  • 4 cups mixed salad greens (romaine, arugula, or butter lettuce)
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, thinly sliced
  • ½ red onion, thinly sliced
  • ¼ cup fresh mint leaves
  • ¼ cup fresh cilantro leaves
  • 2 tablespoons crushed roasted peanuts (optional, for crunch)

For the Dressing:

  • 3 tablespoons fish sauce
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 tablespoon soy sauce
  • 1 tablespoon honey (or brown sugar)
  • 1 teaspoon red chili flakes (adjust to spice preference)
  • 1 small red chili, finely chopped (optional)
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger

Instructions

Prepare the Beef:

  1. Season the steak – Rub the steak with vegetable oil, salt, and black pepper.
  2. Sear the beef – Heat a skillet or grill pan over high heat. Cook the steak for 3-4 minutes per side for medium-rare, or longer for preferred doneness.
  3. Rest and slice – Remove from heat and let rest for 5 minutes before slicing thinly against the grain.

Make the Dressing:

  1. Whisk the ingredients – In a bowl, mix fish sauce, lime juice, soy sauce, honey, chili flakes, chopped chili, garlic, and ginger until well combined.

Assemble the Salad:

  1. Prepare the vegetables – In a large bowl, mix salad greens, cherry tomatoes, cucumber, red onion, mint, and cilantro.
  2. Add the beef – Place the sliced beef over the salad.
  3. Drizzle with dressing – Pour the dressing over the salad and toss gently to combine.
  4. Garnish and serve – Sprinkle with crushed peanuts and extra herbs if desired.
