For Garnish & Serving

  • Fresh parsley, chopped
  • Cracked black pepper
  • Grated Parmesan cheese (optional)
  • Crusty bread or garlic toast

Instructions

Step 1: Sauté the Vegetables

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion and garlic for 2-3 minutes, until softened and fragrant.
  3. Add carrots and celery and cook for another 5 minutes until slightly tender.

Step 2: Build the Flavor

  1. Season the soup: Stir in salt, black pepper, smoked paprika, thyme, Worcestershire sauce, and bay leaf.
  2. Add stock: Pour in turkey stock and bring to a simmer.

Step 3: Add Turkey and Grains

  1. Add shredded turkey: Stir in the cooked turkey and let simmer for 10 minutes.
  2. Include rice or pasta: If using, add cooked rice, pasta, or barley and cook for another 5 minutes.

Step 4: Finish the Soup

  1. Stir in greens: Add spinach or kale, allowing them to wilt for 2 minutes.
