1 lb (450g) good-quality sausage meat
1 onion, finely chopped
1 clove garlic, minced
1 apple, peeled and finely diced
3 cups (150g) fresh breadcrumbs (from rustic white or sourdough bread)
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh sage
1 tablespoon chopped fresh thyme
2 tablespoons butter
1 large egg, beaten
Salt and freshly ground black pepper, to taste
Optional add-ins: chopped chestnuts, dried cranberries, or pancetta
Preheat the oven: Set oven to 375°F (190°C) if baking separately.
Cook the aromatics: Melt butter in a pan over medium heat. Add chopped onion and cook for 4–5 minutes until soft. Add garlic and cook for 1 minute more.
Add the apples and herbs: Stir in the diced apple, parsley, sage, and thyme. Cook for 2–3 minutes until the apple starts to soften. Remove from heat and let cool slightly.
Combine the stuffing base: In a large bowl, mix the sausage meat with breadcrumbs. Add the cooked onion-apple mixture and season with salt and pepper.
Bind with egg: Pour in the beaten egg and mix everything together until well combined. The mixture should hold together when pressed.
Bake or stuff the turkey:
To bake separately: Transfer mixture to a buttered baking dish. Bake uncovered for 30–35 minutes, or until golden and cooked through.
To stuff the turkey: Loosely fill the turkey cavity with the stuffing just before roasting. Do not pack it tightly.
Serve warm: Let rest for 5–10 minutes before serving if baked separately.
