John Wayne Casserole is a baked dish made with layers of biscuit dough, ground beef, tomatoes, bell peppers, and a creamy, cheesy topping. 1 lb (450 g) ground beef
1 packet taco seasoning
1 can (10 oz) diced tomatoes with green chilies (Rotel-style)
1 small onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
2 cups shredded cheddar cheese
1 cup sour cream
½ cup mayonnaise
1 can (16 oz) refrigerated biscuit dough or 2 cups homemade biscuit mix
1 tsp salt
½ tsp black pepper
1 tbsp olive oil
Preheat the oven – Set oven to 375°F (190°C) and lightly grease a baking dish.
Cook the beef – Heat olive oil in a skillet, add ground beef, and cook until browned. Drain excess grease.
Add seasonings and vegetables – Stir in taco seasoning, onions, and bell peppers. Cook for 5 minutes until vegetables soften slightly. Add diced tomatoes and simmer for another 5 minutes.
Prepare the biscuit base – Press biscuit dough into the bottom of the baking dish, flattening evenly across the surface. Pre-bake for 8–10 minutes until lightly golden.
Mix the creamy layer – In a bowl, combine sour cream, mayonnaise, and half of the shredded cheddar cheese. Mix well and set aside.
Assemble the casserole – Layer the cooked beef mixture over the biscuit base. Spread the creamy sour cream mixture on top, then sprinkle with the remaining cheddar cheese.
Bake until bubbly – Bake for 25–30 minutes until the cheese is melted and golden brown.
Cool before serving – Let it rest for 5–10 minutes before slicing for easier serving.
