For the bread:
1 ¾ cups all-purpose flour
1 cup pumpkin puree
2 ripe bananas (mashed)
½ cup honey
½ cup vegetable oil (or melted butter)
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 ½ teaspoons ground cinnamon
½ teaspoon ground nutmeg
2–3 tablespoons milk (if needed)
For the honey glaze:
3 tablespoons honey
1 tablespoon milk
½ teaspoon vanilla extract
Instructions
Step 1: Preheat the oven – Preheat your oven to 175°C (350°F) and grease a loaf pan.
Step 2: Prepare wet ingredients – In a large bowl, mash the bananas, then mix with pumpkin puree, honey, oil, eggs, and vanilla extract until smooth.
Step 3: Mix dry ingredients – In another bowl, whisk together flour, baking soda, baking powder, salt, and spices.
Step 4: Combine mixtures – Gradually add the dry ingredients into the wet mixture, stirring gently until just combined.
Step 5: Adjust consistency – Add milk if needed; the batter should be thick yet pourable.
Step 6: Pour into pan – Transfer the batter into the prepared loaf pan and smooth the top evenly.
Step 7: Bake the bread – Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
Step 8: Prepare glaze – In a small bowl, mix honey, milk, and vanilla extract until smooth.
Step 9: Apply glaze – While the bread is slightly warm, brush or drizzle the honey glaze over the top.
Step 10: Cool and serve – Let the bread cool completely before slicing for best texture.
