For the bread:

  • 1 ¾ cups all-purpose flour
  • 1 cup pumpkin puree
  • 2 ripe bananas (mashed)
  • ½ cup honey
  • ½ cup vegetable oil (or melted butter)
  • 2 large eggs

  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • 23 tablespoons milk (if needed)

For the honey glaze:

  •  3 tablespoons honey
  • 1 tablespoon milk
  • ½ teaspoon vanilla extract

Instructions

  • Step 1: Preheat the oven – Preheat your oven to 175°C (350°F) and grease a loaf pan.
  • Step 2: Prepare wet ingredients – In a large bowl, mash the bananas, then mix with pumpkin puree, honey, oil, eggs, and vanilla extract until smooth.
  • Step 3: Mix dry ingredients – In another bowl, whisk together flour, baking soda, baking powder, salt, and spices.
  • Step 4: Combine mixtures – Gradually add the dry ingredients into the wet mixture, stirring gently until just combined.
  • Step 5: Adjust consistency – Add milk if needed; the batter should be thick yet pourable.
  • Step 6: Pour into pan – Transfer the batter into the prepared loaf pan and smooth the top evenly.
  • Step 7: Bake the bread – Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  • Step 8: Prepare glaze – In a small bowl, mix honey, milk, and vanilla extract until smooth.
  • Step 9: Apply glaze – While the bread is slightly warm, brush or drizzle the honey glaze over the top.
  • Step 10: Cool and serve – Let the bread cool completely before slicing for best texture.
