1 medium red cabbage, cored and finely shredded
1 large red onion, thinly sliced
2 medium apples, peeled, cored, and sliced
3 tablespoons olive oil or butter
¼ cup (60ml) red wine vinegar
2 tablespoons brown sugar
¼ teaspoon ground cloves or allspice
Salt and black pepper, to taste
Optional: 1 cinnamon stick or star anise for added spice
Heat the oil or butter: In a large heavy-based saucepan or Dutch oven, heat the olive oil (or butter) over medium heat.
Sauté the onions: Add sliced red onion and cook for 4–5 minutes until softened and lightly caramelized.
Add apples and spices: Stir in the apple slices, brown sugar, cloves (or spice of choice), and a pinch of salt and pepper. Cook for 2–3 minutes until apples start to soften.
Add the cabbage: Toss in the shredded red cabbage and stir well to combine with the onion and apples.
Deglaze with vinegar: Pour in the red wine vinegar and stir everything together, scraping up any bits from the bottom of the pan.
Cover and cook: Reduce heat to low, cover with a lid, and simmer gently for 35–45 minutes, stirring occasionally, until the cabbage is tender and flavors are fully developed.
Adjust seasoning: Taste and adjust with more salt, pepper, or a dash of vinegar if needed before serving.
