This breakfast casserole combines cooked sausage, eggs, cheese, and sometimes vegetables baked together in one dish. It’s similar to a crustless quiche but more filling, making it a go-to recipe for anyone who wants a satisfying meal that can feed a crowd.
1 lb breakfast sausage (turkey, or chicken, cooked and crumbled)
10 large eggs
1 cup milk (or half-and-half for extra creaminess)
2 cups shredded cheddar cheese (or a cheese blend)
1 small onion, finely chopped (optional)
1 red bell pepper, diced (optional)
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons fresh parsley (optional, for garnish)
Set oven to 350°F (175°C) and grease a 9×13-inch baking dish.
Brown sausage in a skillet until fully cooked. Drain grease and set aside.
If using onion and bell pepper, sauté them until softened.
In a large bowl, whisk eggs, milk, garlic powder, salt, and pepper until smooth.
Spread sausage and vegetables evenly in the baking dish. Pour egg mixture over them, then top with shredded cheese.
Bake uncovered for 35–40 minutes, or until eggs are set and the top is golden.
Allow casserole to cool for 5 minutes before slicing. Garnish with parsley if desired.
