A sausage, egg, and cottage cheese casserole is a baked breakfast dish that blends scrambled eggs, browned sausage, cottage cheese, and shredded cheese into a protein-packed meal. The cottage cheese adds creaminess and keeps the casserole light while boosting protein content. It’s a perfect make-ahead option for anyone who wants a nutritious and filling breakfast.
1 pound ground breakfast sausage (pork or turkey)
10 large eggs
1 cup cottage cheese (full-fat or low-fat)
1 cup shredded cheddar cheese (or a mix of cheddar and mozzarella)
½ cup milk (or heavy cream for richness)
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon black pepper
½ teaspoon salt (adjust to taste)
1 tablespoon butter (for greasing the dish)
Optional: ½ cup chopped spinach or diced bell peppers for extra flavor
Set the oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter or non-stick spray.
In a skillet over medium heat, cook the sausage until browned and no longer pink. Drain any excess fat and let it cool slightly.
In a large mixing bowl, whisk together eggs, milk, cottage cheese, garlic powder, onion powder, salt, and pepper until smooth and well combined.
Spread the cooked sausage evenly in the prepared baking dish. Pour the egg mixture over the sausage and sprinkle shredded cheddar cheese on top.
Bake uncovered for 35–40 minutes, or until the center is set and the top is lightly golden.
Allow the casserole to cool for 5–10 minutes before slicing. Serve warm and enjoy a creamy, cheesy, and satisfying breakfast.
