A turkey sausage breakfast casserole is a baked egg dish that combines lean turkey sausage, cheese, and eggs into a comforting one-pan meal. It’s lower in fat than traditional pork sausage casseroles but just as hearty and filling.
1 pound ground turkey sausage
8 large eggs
1 cup milk (or almond milk for a lighter version)
2 cups shredded cheddar cheese (or mozzarella)
1 small onion, finely chopped
1 red bell pepper, diced
3 cups thawed hashbrowns (or cubed bread)
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon Italian seasoning (optional)
2 tablespoons fresh parsley, chopped (optional garnish)
Set oven to 350°F (175°C) and grease a 9×13-inch baking dish with non-stick spray.
In a skillet, cook ground turkey sausage over medium heat until browned and fully cooked. Drain any excess moisture and set aside.
In the same skillet, cook onion and red bell pepper for 3–4 minutes until soft.
In a large bowl, whisk eggs, milk, garlic powder, salt, black pepper, and Italian seasoning until smooth.
Layer hashbrowns evenly at the bottom of the baking dish. Add cooked sausage and vegetables on top, then pour the egg mixture evenly over everything. Sprinkle cheese across the top.
Bake uncovered for 35–40 minutes, or until eggs are set and the top is golden.
Allow the casserole to cool for 5–10 minutes before slicing. Garnish with fresh parsley if desired.
