Gordon Ramsay Apple and Cranberry Crumble

Gordon Ramsay Apple and Cranberry Crumble - recipe card

A warm, comforting dessert with tender apples and tart cranberries under a golden, buttery oat crumble. The filling is lightly sweetened with brown sugar and cinnamon, while the topping is crisp and nutty. Perfect for cold evenings, served with a scoop of vanilla ice cream or a drizzle of cream.

Ingredients

Scale
  • For the filling:
  • 3 large apples (about 1.5 lb / 680 g), peeled, cored, and cut into 1/2-inch chunks
  • 1 cup fresh cranberries (about 3.5 oz / 100 g), rinsed and picked over
  • 1/4 cup packed light brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp fresh lemon juice
  • 1 tbsp cornstarch
  • For the crumble topping:
  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1/2 cup packed light brown sugar
  • 1/2 tsp kosher salt
  • 1/2 cup unsalted butter, cold, cut into small cubes
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9-inch pie dish or 8×8-inch baking dish with butter or nonstick spray.
  2. In a large bowl, combine the apple chunks, cranberries, 1/4 cup brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss until the fruit is evenly coated. Let it sit for 10 minutes to allow the juices to release.
  3. Transfer the fruit mixture to the prepared baking dish, spreading it into an even layer. Set aside.
  4. In a separate large bowl, whisk together the flour, oats, 1/2 cup brown sugar, and salt. Add the cold butter cubes.
  5. Using your fingertips or a pastry blender, rub the butter into the dry ingredients until the mixture resembles coarse breadcrumbs with some pea-sized butter pieces remaining. Stir in the chopped nuts if using.
  6. Sprinkle the crumble topping evenly over the fruit, covering it completely. Do not press down; keep it loose for a crisp texture.
  7. Bake in the preheated oven for 35-40 minutes, until the topping is golden brown and the fruit juices are bubbling around the edges. If the top browns too quickly, tent loosely with foil after 25 minutes.
  8. Remove from the oven and let cool on a wire rack for 10-15 minutes before serving. This allows the juices to thicken slightly.
  9. Serve warm with vanilla ice cream, whipped cream, or custard. Enjoy!
