Gordon Ramsay Apple Sauce

Spoonful of chunky homemade apple sauce from a saucepan

Tart apples simmered with a touch of sugar, lemon and cinnamon, then finished with butter for a tangy, chunky sauce. It takes 25 minutes and suits roast chicken, duck and holiday dinners.

Ingredients

Scale

For the Apples

  • 2 pounds tart cooking apples (about 4 large), peeled, cored and cut into 1-inch chunks
  • 3 tablespoons water
  • 1 tablespoon fresh lemon juice

Sweetening and Spice

  • 2 tablespoons granulated sugar, plus more to taste
  • Pinch of ground cinnamon
  • Pinch of fine sea salt

To Finish

  • 1 tablespoon unsalted butter
  • 1/2 teaspoon lemon zest (optional)

Instructions

  1. Peel, core and chop the apples into 1-inch chunks, tossing them with the lemon juice.
  2. Add the apples, water, sugar, cinnamon and salt to a medium saucepan, cover and bring to a simmer over medium heat.
  3. Reduce to medium-low and cook, covered, for 10 to 12 minutes, stirring occasionally, until most of the apples collapse.
  4. Beat with a wooden spoon or mash to your preferred texture.
  5. Simmer uncovered for 2 to 3 minutes if the sauce is watery.
  6. Remove from the heat, stir in the butter and lemon zest and adjust the sugar and lemon to taste.
  7. Serve warm with roasts or chill for later.

Notes
