Gordon Ramsay Bread Sauce

Spoonful of creamy bread sauce with nutmeg and a clove-studded onion

Milk infused with a clove-studded onion, bay and peppercorns is thickened with fresh breadcrumbs and enriched with butter, cream and nutmeg. It is the classic creamy sauce for a British Christmas roast.

Ingredients

Scale

For the Infused Milk

  • 2 cups whole milk
  • 1 small yellow onion, peeled and halved
  • 6 whole cloves
  • 1 bay leaf
  • 6 black peppercorns

For the Sauce

  • 2 cups fresh white breadcrumbs (about 4 ounces), from day-old bread with crusts removed
  • 2 tablespoons unsalted butter
  • 2 tablespoons heavy cream

Seasoning

  • 1/4 teaspoon freshly grated nutmeg, plus more to finish
  • 1/2 teaspoon fine sea salt
  • Pinch of ground white pepper

Instructions

  1. Press the cloves into the cut onion halves.
  2. Heat the milk with the onion, bay leaf and peppercorns over medium-low heat for 5 minutes until steaming. Remove from the heat, cover and infuse for 30 minutes.
  3. Meanwhile, trim the crusts from day-old white bread and pulse into fine crumbs to make about 2 cups.
  4. Remove the onion, bay leaf and peppercorns, squeezing the onion to release its milk.
  5. Return the milk to medium-low heat, stir in the breadcrumbs and simmer gently for 4 to 5 minutes, stirring often, until thick and creamy.
  6. Beat in the butter and cream, then season with the nutmeg, salt and white pepper, adding a splash of milk if too thick.
  7. Transfer to a warm bowl, grate over more nutmeg and serve with the roast.

Notes

Refrigerate for up to 3 days or freeze for up to 1 month. Reheat gently with a splash of milk, stirring, until smooth and 165°F (74°C).
