Gordon Ramsay’s Chicken Thighs are pan-seared and oven-finished for crispy skin and tender, juicy meat. Cooked with garlic, butter, and fresh thyme or rosemary, the dish is simple yet bursting with flavor.

  • 4 bone-in, skin-on chicken thighs
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika (optional)
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 cloves garlic, crushed
  • 2 sprigs fresh thyme or rosemary
  • 1 tbsp lemon juice (optional)

Instructions

Step 1: Prepare the Chicken

  • Pat the chicken thighs dry with paper towels to ensure crispy skin.
  • Season well with salt, black pepper, and smoked paprika.

Step 2: Sear the Chicken

  • Heat olive oil in a large oven-safe pan over medium-high heat.
  • Place chicken thighs skin-side down and cook for 6-7 minutes until golden brown.
  • Flip and cook for another 2 minutes on the other side.

Step 3: Add Butter & Aromatics

  • Reduce heat to medium, then add butter, garlic, and thyme/rosemary.
  • Baste the chicken by spooning the melted butter over the thighs for 1-2 minutes.

Step 4: Finish in the Oven

  • Preheat oven to 400°F (200°C).
  • Transfer the pan to the oven and roast for 15-20 minutes until the chicken reaches 165°F (75°C) internally.

Step 5: Rest & Serve

  • Remove from the oven and let the chicken rest for 5 minutes.
  • Drizzle with lemon juice, serve, and enjoy!
