  • ¼ cup grated Parmesan cheese (optional, for garnish)
  • Fresh parsley or chives, for garnish

Instructions

  1. Sauté the aromatics: In a large pot, heat butter or olive oil over medium heat. Add onions and garlic, sautéing until soft and fragrant.
  2. Add the broccoli: Stir in the chopped broccoli and cook for 2-3 minutes.
  3. Pour in the stock: Add vegetable or chicken stock, bring to a boil, then reduce heat and simmer for 10-12 minutes until the broccoli is tender.
  4. Blend the soup: Use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender and blend in batches.
  5. Stir in the cream: Return the soup to low heat and mix in the heavy cream. Add salt, pepper, and nutmeg (if using). Simmer for 2 minutes.
