Gordon Ramsay’s Lamb Cutlets are French-trimmed lamb chops, seasoned with aromatic herbs, garlic, and olive oil, then pan-seared to perfection. This cooking method ensures a crispy, golden-brown crust with a juicy, tender inside.

  • 8 lamb cutlets (French-trimmed)
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp Dijon mustard
  • 1 tbsp fresh lemon juice

Instructions

Prepare the Lamb Cutlets:

  1. Pat dry the lamb – Use paper towels to remove excess moisture for better searing.
  2. Season well – Rub both sides with salt, black pepper, rosemary, thyme, and Dijon mustard.

Sear the Lamb Cutlets:

  1. Heat olive oil in a pan – Place a cast-iron or stainless steel skillet over medium-high heat.
  2. Sear the lamb – Add cutlets and cook for 2-3 minutes per side, until golden brown.
  3. Add butter and garlic – Melt butter, add garlic, and baste the lamb for 1-2 minutes.

Finish and Serve:

  1. Squeeze lemon juice – Just before removing from heat, drizzle with fresh lemon juice.
  2. Rest for 5 minutes – Let the lamb sit before serving to keep it juicy.
