Gordon Ramsay Lamb Sauce recipe

This one-pan spicy sausage rice features sliced chorizo or spicy sausages sautéed with onions, bell peppers, garlic, and aromatic spices, then simmered with rice and broth to create a rich and deeply flavorful dish.

For the sausage rice:

  • 2 tbsp olive oil
  • 6 spicy sausages or 1 cup chorizo, sliced
  • 1 small onion, finely chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper (adjust for spice level)
  • 1 cup long-grain rice (Basmati or Jasmine)
  • 2 cups chicken or vegetable stock
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 medium tomato, chopped
  • ½ cup frozen peas
  • Salt and black pepper (to taste)

For garnish:

 

  • 1 tbsp fresh parsley, chopped
  • Lemon wedges (optional)

Instructions

Step 1: Cook the Sausages

  1. Heat olive oil in a large pan over medium-high heat.
  2. Add sliced chorizo or sausages and cook for 4-5 minutes until browned and slightly crispy. Remove and set aside.

Step 2: Sauté the Vegetables

  1. In the same pan, sauté onions and bell pepper for 3-4 minutes until softened.
  2. Add garlic, smoked paprika, and cayenne pepper, stirring for 30 seconds until fragrant.

Step 3: Cook the Rice

  1. Stir in rice, tomato paste, and Worcestershire sauce, coating the grains with the flavorful mixture.
  2. Pour in chicken stock and add chopped tomatoes, then stir well.
  3. Return the cooked sausages to the pan, cover, and simmer for 15-18 minutes on low heat until the rice is tender.

Step 4: Finish & Serve

 

  1. Stir in frozen peas, cover, and let sit for 5 minutes to warm through.
  2. Fluff the rice with a fork, garnish with fresh parsley, and serve with lemon wedges.
