For the Lobster:

  • 2 lobster tails (68 oz each)
  • 1 tbsp butter
  • 1 tbsp olive oil

For the Pasta Sauce:

  • 8 oz linguine or spaghetti
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 shallot, finely chopped
  • ½ cup cherry tomatoes, halved
  • ½ cup white wine (or seafood broth)
  • ½ cup heavy cream (optional, for a creamy version)
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh parsley, chopped
  • ¼ cup grated Parmesan (optional, for garnish)

Instructions

Prepare the Lobster:

  1. Boil or steam the lobster tails – Cook in boiling water for 4-5 minutes until the shells turn bright red.
  2. Remove the meat – Let cool slightly, then use kitchen scissors to cut open the shells and extract the lobster meat. Chop into bite-sized pieces.

Cook the Pasta:

  1. Boil linguine in salted water – Cook according to package instructions until al dente, then drain and reserve ½ cup pasta water.

Make the Sauce:

  1. Sauté aromatics – In a large skillet, heat olive oil and butter over medium heat. Add garlic, shallots, and red pepper flakes, cooking until fragrant (1-2 minutes).
  2. Add cherry tomatoes – Cook for 3-4 minutes until soft and slightly blistered.
  3. Deglaze with white wine – Pour in the wine and simmer for 2-3 minutes until reduced.
  4. Add heavy cream (if using) – Stir for a light, creamy consistency.

Combine Everything:

  1. Toss in lobster meat – Add cooked lobster pieces and stir gently to coat in the sauce.
  2. Mix in the pasta – Add the cooked pasta and reserved pasta water, tossing to combine.
  3. Finish with lemon and herbs – Stir in lemon juice, fresh parsley, and extra butter.

Serve and Enjoy:

  1. Plate the pasta – Garnish with Parmesan cheese (if using) and extra parsley.
