  • 2 cups fresh spinach or kale, chopped
  • Grated Parmesan cheese, for garnish
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot: Over medium heat, warm the olive oil until it shimmers.
  2. Sauté onions and garlic: Cook the onions and garlic until softened and fragrant.
  3. Add the carrots and celery: Stir in the diced carrots and celery, cooking for 3-4 minutes.
