Gordon Ramsay’s Moroccan Lamb is a slow-cooked lamb dish inspired by traditional Moroccan flavors. It features tender lamb shanks or shoulder, marinated in warm spices and slow-braised with tomatoes, chickpeas, and dried fruit for a dish that’s both savory and slightly sweet.

For the lamb:

  • 2 lbs (900g) lamb shanks or lamb shoulder, cut into chunks
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • ½ tsp ground cinnamon
  • ½ tsp ground turmeric
  • ½ tsp chili flakes (optional)
  • 1 tbsp tomato paste
  • 1 can (14 oz) chopped tomatoes
  • 1 ½ cups (360ml) lamb or beef stock
  • 1 can (14 oz) chickpeas, drained
  • ½ cup dried apricots or raisins, chopped
  • 1 tbsp honey
  • 1 tsp salt
  • ½ tsp black pepper
  • Juice of ½ lemon
  • 1 tbsp fresh cilantro or parsley, chopped (for garnish)

For serving:

  • Cooked couscous or rice
  • Toasted almonds or pistachios (optional)
  • Greek yogurt (optional)

Instructions

Step 1: Sear the Lamb

  • Heat olive oil in a large pot over medium-high heat.
  • Brown the lamb on all sides (about 5-7 minutes), then remove and set aside.

Step 2: Cook the Aromatics

  • Sauté onions, garlic, and ginger in the same pot until soft.
  • Stir in the spices (cumin, coriander, paprika, cinnamon, turmeric, and chili flakes) and cook for 1 minute to release their flavors.

Step 3: Simmer the Dish

  • Add tomato paste, chopped tomatoes, and stock to the pot. Stir well.
  • Return the lamb to the pot, cover, and simmer for 1.5 to 2 hours, stirring occasionally.

Step 4: Add Chickpeas & Sweetness

  • Stir in chickpeas, dried apricots, and honey.
  • Simmer uncovered for another 20 minutes until the sauce thickens.

Step 5: Finish & Serve

  • Squeeze in lemon juice and stir.
  • Garnish with fresh cilantro or parsley.
  • Serve over couscous or rice, topped with toasted almonds or Greek yogurt if desired.
