Gordon Ramsay Onion Gravy

Rich onion gravy with caramelized onions in a saucepan

Thinly sliced onions are slowly caramelized in butter, then simmered with thyme, beef stock and Worcestershire into a deep, glossy gravy. It is the classic partner for sausages and mash.

Ingredients

Scale

For the Onions

  • 3 large yellow onions (about 1 1/2 pounds), thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1/2 teaspoon fine sea salt
  • 1 teaspoon granulated sugar

Aromatics

  • 2 cloves garlic, minced
  • 4 sprigs fresh thyme, leaves stripped
  • 1 bay leaf

For the Gravy

  • 2 tablespoons all-purpose flour
  • 2 1/2 cups low-sodium beef stock
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Freshly ground black pepper, to taste

Instructions

  1. Heat the butter and oil in a wide, heavy skillet over medium heat. Add the onions and salt and cook for 10 minutes, stirring occasionally, until softened.
  2. Reduce the heat to medium-low, add the sugar and cook for 20 to 25 minutes, stirring every few minutes and adding a splash of water if needed, until deep golden and jammy.
  3. Stir in the garlic and thyme leaves and cook for 1 minute.
  4. Sprinkle in the flour and stir constantly for 2 minutes.
  5. Gradually stir in the stock, starting with 1/2 cup to form a paste, then add the Worcestershire, Dijon and bay leaf.
  6. Bring to a boil, then simmer gently for 8 to 10 minutes until thick and glossy.
  7. Remove the bay leaf, stir in the vinegar, season with pepper and salt and serve hot.

Notes

Refrigerate for up to 4 days or freeze for up to 3 months. Reheat in a saucepan with a splash of stock until bubbling and 165°F (74°C).
