Gordon Ramsay’s Turkey Crown is a bone-in turkey breast roasted with herb-infused butter and a touch of lemon, keeping the meat juicy while achieving a crispy, golden skin. It’s ideal for those who want a smaller roast without the whole turkey but still enjoy the classic holiday flavors.

For the turkey crown:

  • 1 turkey crown (bone-in, approx. 56 lbs)
  • 4 tbsp unsalted butter, softened
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh sage, chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 lemon, zested and halved

For the roasting base:

  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup chicken or turkey stock
  • ½ cup white wine (optional)

Instructions

Step 1: Prepare the Turkey Crown

  1. Preheat the oven – Set to 375°F (190°C).
  2. Make the herb butter – Mix butter, garlic, thyme, rosemary, sage, lemon zest, salt, and black pepper in a bowl.
  3. Loosen the turkey skin – Gently separate the skin from the meat using your hands.
  4. Apply the herb butter – Spread half of the butter under the skin and the rest over the turkey.

Step 2: Roast the Turkey Crown

  1. Prepare the roasting base – Place onions, carrots, and celery in a roasting tray. Pour in stock and white wine.
  2. Position the turkey – Place the turkey crown on top of the vegetables. Drizzle with olive oil.
  3. Roast for 1 hour 30 minutes – Baste the turkey every 30 minutes with the pan juices.

Step 3: Check for Doneness & Rest

  1. Check the temperature – Use a meat thermometer; the thickest part should read 160°F (70°C).
  2. Rest the turkey – Cover loosely with foil and let it rest for 20 minutes before carving.
