  • 2 tbsp olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • ½ tsp chili flakes (optional)

  • 1 tsp dried oregano or thyme

  • ½ cup chicken or turkey broth

  • ½ cup heavy cream or crème fraîche

  • ¼ cup grated Parmesan cheese

  • Salt and black pepper, to taste

  • Fresh parsley or basil, chopped (for garnish)

Instructions

Cook the Pasta:

  1. Boil a large pot of salted water.

  2. Cook the pasta according to package directions until al dente.

  3. Drain and reserve ½ cup of pasta water.

Sauté the Aromatics:

  1. In a large skillet, heat olive oil over medium heat.

  2. Add chopped onion and cook for 2–3 minutes until softened.

  3. Stir in garlic and chili flakes, cook for 30 seconds until fragrant.

Cook the Turkey:

  1. If using cooked turkey, add it now and heat through.

  2. If using ground turkey, cook it in the pan until browned and cooked through.

  3. Season with salt, pepper, and dried herbs.

Make the Sauce:

  1. Add broth and simmer for 2 minutes.

  2. Stir in heavy cream and Parmesan cheese, mixing until smooth and slightly thickened.

  3. Add lemon juice if using, for a fresh finish.

Combine and Finish:

  1. Add drained pasta to the skillet and toss to coat in the sauce.

  2. Use reserved pasta water as needed to loosen the sauce.

  3. Garnish with fresh herbs and more Parmesan. Serve hot.
