  • 2 cans (14 oz each) white beans (cannellini or great northern), drained and rinsed
  • ½ cup heavy cream or milk (optional, for a creamy version)
  • Juice of ½ lemon (for brightness)

For Garnish & Serving

  • Fresh parsley, chopped
  • Drizzle of olive oil
  • Grated Parmesan cheese (optional)
  • Crispy pancetta or bacon bits (optional)
  • Crusty bread or garlic toast

Instructions

Step 1: Sauté the Vegetables

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion and garlic for 2-3 minutes until fragrant.
  3. Add carrot and celery and cook for another 5 minutes until softened.

Step 2: Build the Flavor

  1. Season the soup: Stir in salt, black pepper, smoked paprika, thyme, and bay leaf.
  2. Add stock and beans: Pour in vegetable or chicken stock and add white beans. Bring to a simmer.

Step 3: Simmer and Blend

  1. Simmer the soup: Let it cook for 15-20 minutes to develop flavors.
  2. Blend the soup: Use an immersion blender to puree the soup until smooth, or blend half and leave the rest chunky for texture.

Step 4: Finish the Soup

  1. Stir in cream or milk (if using) for a creamier consistency.
  2. Adjust seasoning: Add lemon juice, taste, and adjust salt and pepper if needed.

Step 5: Serve and Garnish
