Ingredients

Scale

For the Sweet Potatoes

  • 2 medium sweet potatoes (about 1 1/2 lb), peeled and cut into 1/2-inch cubes
  • 2 tbsp olive oil
  • 1/2 tsp kosher salt

For the Turkey and Vegetables

  • 1 lb ground turkey (93% lean)
  • 1 tbsp olive oil
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 3 garlic cloves, minced

Spice Blend

  • 1 1/2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

To Finish

  • 1 (15-oz) can black beans, drained and rinsed
  • 2 cups baby spinach
  • 1/4 cup low-sodium chicken broth
  • 1 cup shredded cheddar
  • 1 avocado, diced
  • 2 green onions, sliced
  • 1/4 cup fresh cilantro
  • Lime wedges, for serving

Instructions

  1. Heat 2 tablespoons oil in a 12-inch skillet over medium-high heat. Add the sweet potatoes in a single layer with 1/2 teaspoon salt and cook untouched for 4 minutes. Stir, cover, reduce to medium and cook 8 minutes until tender, then uncover for 2 minutes and transfer to a plate.
  2. Add 1 tablespoon oil to the skillet over medium-high heat. Press in the turkey and cook untouched for 4 to 5 minutes, then break up and cook 2 minutes more.
  3. Add the bell pepper and onion and cook for 4 minutes. Stir in the garlic, chili powder, cumin, smoked paprika, 1/2 teaspoon salt and pepper for 1 minute.
  4. Pour in the broth and scrape up the browned bits. Add the black beans, sweet potatoes and spinach and toss for 2 minutes until the spinach wilts and the turkey reads 165°F (74°C).
  5. Scatter the cheddar on top, cover and cook on low for 2 minutes until melted.
  6. Top with avocado, green onions and cilantro and serve with lime wedges. Make ahead: portion the cooled skillet without toppings and refrigerate for up to 4 days.

Notes

Refrigerate leftovers for up to 4 days or freeze without the avocado for up to 3 months. Reheat in a skillet with a splash of broth or in the microwave until 165°F (74°C).
