Turkey Cranberry Pinwheels

Soft flour tortillas spread with a cranberry, pecan and orange cream cheese, layered with leftover turkey, Swiss and spinach, then rolled tight and chilled. Sliced into neat spirals, they make an easy make-ahead holiday appetizer.

For the Cranberry Cream Cheese

  • 8 oz cream cheese, softened
  • 1/2 cup dried cranberries, finely chopped
  • 1/2 cup pecans, toasted and finely chopped
  • 1 tsp orange zest
  • 2 green onions, thinly sliced
  • a pinch each of kosher salt and black pepper

For the Rolls

  • 5 large (10-inch) flour tortillas
  • 10 oz cooked turkey, thinly sliced
  • 5 slices Swiss cheese
  • 2 cups baby spinach, completely dry

For Serving

  • 1/2 cup cranberry sauce (optional)
  • fresh rosemary sprigs (optional)

Instructions

  1. Toast the chopped pecans in a dry skillet over medium heat for 3 to 4 minutes, stirring often, until fragrant and lightly golden. Cool completely.
  2. Beat the softened cream cheese in a bowl until smooth, then stir in the cranberries, pecans, orange zest, green onions, salt and pepper.
  3. Divide the cream cheese mixture among the 5 tortillas and spread it in a thin, even layer all the way to the edges.
  4. Place 1 slice of Swiss cheese on the lower half of each tortilla, then cover with 2 ounces of turkey and a single layer of spinach. Leave the top 2 inches with only the spread.
  5. Starting at the filled edge, roll each tortilla up as tightly as possible, tucking in the fillings. Wrap each roll snugly in plastic wrap.
  6. Refrigerate seam side down for at least 1 hour or up to 24 hours, until firm.
  7. Unwrap, trim off the uneven ends and cut each roll into 8 slices about 1 inch thick with a serrated knife. Serve chilled, with cranberry sauce for dipping if you like.

Notes

Wrap unsliced rolls tightly and refrigerate for up to 2 days, then slice just before serving. Sliced pinwheels keep for 24 hours in an airtight container. Freezing is not recommended.
