Saucy turkey sloppy joe on a toasted bun with filling spilling out and a pickle spear

Browned ground turkey simmered with onion, green pepper and a homemade sweet and tangy tomato sauce. Spooned onto butter-toasted buns with pickles, it is a quick, messy, family-friendly dinner.

Ingredients

Scale

For the Turkey

  • 1 1/2 lb ground turkey (93% lean)
  • 1 tbsp olive oil
  • 1 yellow onion, finely diced
  • 1 green bell pepper, finely diced
  • 3 garlic cloves, minced
  • 1/2 tsp kosher salt

For the Sauce

  • 1 (8-oz) can tomato sauce
  • 1/3 cup ketchup
  • 2 tbsp tomato paste
  • 1 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tbsp yellow mustard
  • 1 tbsp soy sauce
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1/2 cup low-sodium chicken broth

For Serving

  • 6 brioche or potato buns
  • 1 tbsp unsalted butter
  • 3/4 cup shredded cheddar (optional)
  • Dill pickle slices

Instructions

  1. Heat the oil in a large skillet over medium-high heat. Add the turkey and salt, press into an even layer and cook untouched for 5 minutes, then break into fine crumbles and cook 2 minutes more.
  2. Add the onion and green pepper and cook for 5 minutes until soft. Stir in the garlic for 1 minute.
  3. Push the meat aside, add the tomato paste, chili powder, smoked paprika and black pepper to the pan and stir for 1 minute.
  4. Add the tomato sauce, ketchup, brown sugar, vinegar, mustard, soy sauce and broth. Simmer over medium-low heat for 10 to 12 minutes, stirring often, until thick and the filling reads 165°F (74°C). Make ahead: the cooled filling can be refrigerated for up to 4 days.
  5. Meanwhile, butter the cut sides of the buns and toast on a griddle over medium heat for 1 to 2 minutes.
  6. Spoon about 2/3 cup filling onto each bun, top with cheddar if using and pickles, and serve.

Notes

Refrigerate the filling for 3 to 4 days or freeze for up to 3 months, storing buns separately. Reheat on the stove with a splash of broth or in the microwave until 165°F (74°C).
