Turkey Wing Gravy

Spoon coated in thick, glossy turkey wing gravy

Turkey wings and vegetables roasted until deep golden-brown, simmered into a rich homemade stock and thickened with a roux made from the skimmed turkey fat. A glossy, full-flavored gravy that needs no pan drippings.

Ingredients

Scale

For Roasting the Wings

  • 3 lb turkey wings, cut at the joints
  • 1 large yellow onion, quartered
  • 2 carrots, cut in 2-inch pieces
  • 2 celery stalks, cut in 2-inch pieces
  • 1 tbsp olive oil
  • 1/2 tsp kosher salt

For the Stock

  • 8 cups cold water
  • 4 sprigs fresh thyme
  • 1 bay leaf
  • 8 black peppercorns
  • a small handful of parsley stems

For the Gravy

  • 1/3 cup skimmed turkey fat or unsalted butter
  • 1/3 cup all-purpose flour
  • 4 cups hot turkey wing stock
  • kosher salt and black pepper to taste
  • 1 tsp finely chopped fresh sage (optional)

Instructions

  1. Heat the oven to 425°F (220°C). Pat the wings dry, toss with the vegetables, oil and salt, spread in one layer and roast 60 minutes, turning halfway, until deep golden-brown.
  2. Move the wings and vegetables to a large stockpot. Pour 1 cup of the water into the hot pan, scrape up the browned bits and add it to the pot.
  3. Add the remaining water, thyme, bay leaf, peppercorns and parsley stems. Bring to a boil, skim the foam and simmer uncovered for 1 1/2 hours.
  4. Strain, pressing on the solids, and let settle 5 minutes. Skim off the fat, saving 1/3 cup; you should have about 4 cups of stock.
  5. Warm the reserved fat in a heavy saucepan over medium heat, whisk in the flour and cook 3 minutes until golden.
  6. Gradually whisk in the hot stock and simmer 8 to 10 minutes until the gravy coats a spoon.
  7. Season with salt and pepper, stir in the sage if using, and serve hot.

Notes

Makes about 4 cups (16 servings of 1/4 cup). Refrigerate the stock or gravy for up to 2 days or freeze for 2 to 3 months. Reheat with a splash of stock, whisking, until it boils.
